DROP CORNMEAL BISCUITS

1 3/4 cups all-purpose flour

2/3 cup cornmeal

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold butter

1 cup buttermilk*

*Substitute 1 tablespoon lemon juice or vinegar plus enough milk to equal 1 cup

Heat oven to 450 degrees. Combine flour, cornmeal, sugar, baking powder and salt in large bowl; cut in butter until mixture resembles coarse crumbs. Add buttermilk; stir until mixture is just combined. (If the batter is too thin, stir in 1 to 2 tablespoons all-purpose flour.)

Drop by 1/4 cupfuls 1 inch apart onto greased baking sheet. Bake for 12 to 14 minutes or until golden brown.

Makes 1 dozen biscuits
