BANANA PECAN BREAD

1/3 cup butter, melted
1 cup sugar
1 egg, slightly beaten
4 medium bananas
1 teaspoon baking soda
1 3/4 cups bread flour
1/2 cup pecans, chopped


Preheat oven to 350 degrees and spray a 9 by 5 inch baking dish with nonstick spray. Set aside.

In a medium mixing bowl, beat butter and sugar until creamy.

Add egg and lightly beat then add bananas and stir until incorporated.

Mix baking soda and flour just until combined.

Lastly, add chopped pecans and stir.

Place into prepared baking dish and bake for 50 to 60 minutes or until toothpick comes out clean.
