Red Green's Authentic Arkansas Possum Pie

Ingredients

Pecan Shortbread Crust

  • 1 cup all-purpose flour
  • 1/2 cup butter
  • 1/4 cup brown sugar
  • 3/4 cup pecans, chopped

Cream Cheese Layer

  • 6 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tablespoons heavy cream

Pudding Layer

  • 1 cup sugar
  • 1/3 cup cocoa powder
  • 3 tablespoons cornstarch
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • 3 egg yolks
  • 2 cups whole milk
  • 2 tablespoons butter
  • 1 teaspoon vanilla

Whipped Cream Topping

  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla
  • 1-2 tablespoons chopped pecans
  • grated chocolate

Instructions

Crust

  1. Preheat the oven to 350 degrees F.  Melt the butter, then combine the butter, flour, brown sugar and pecans by stirring with a fork.
2. Bake for about 15-20 minutes, just until the crust begins to brown around the edges. Remove from oven and cool completely.

Cream Cheese Filling

1.  In a medium bowl, mix the cream cheese, powdered sugar, and heavy cream using a hand mixer until smooth.  Spread over bottom of the cooled pecan pie crust.

Chocolate Layer

1.  Combine the sugar, cocoa powder, cornstarch, flour, and salt in a medium saucepan and whisk well.

2.  In a separate bowl, combine the egg yolks and milk and whisk well, then add to the sugar and cocoa powder mixture in the sauce pan, whisking to combine.

3.  Cook over medium heat, whisking constantly until pudding begins to thicken and bubble, about 7-10 minutes. Remove from the heat and add the butter and vanilla, stirring just until the butter is

melted and combined.  Transfer the chocolate pudding to a shallow bowl and cover with a plastic wrap directly on the surface of the pudding to prevent a skin from forming, then refrigerate

for 30 minutes to help the filling cool down.

4.  When the filling has mostly cooled down, remove the plastic wrap and stir, then spread over the cream cheese layer.  Cover the pie with plastic wrap, then refrigerate for 4 hours until set.

Whipped Cream Topping

1.  Beat the heavy cream with the powdered sugar and vanilla using a hand mixer until whipped cream forms and holds it's shape when betters are removed.  Spread the whipped cream

over the top of the chocolate pudding layer and sprinkle with a handful of chopped pecans and chocolate shavings before slicing and serving.

The kids and I just love it!

...his uncle's brother on his father's cousin's side was related to a girl that had native Arkansasan ancestors.

...don't be making snarky remarks about that photo in the lower left corner now.
That's a candid shot of the mother of my two sons. When she's in a good mood.

What do I do with this here dead possum since it's not in the recipe?

...Anomaly X...you could always skin the thing and make yourself a nice wintertime mask if you live in a cold climate or just send it to Hey Larry.
He's a taxidermist in real life and just lives for the days when he receives road kill in the mail.

Date: 12/4/2020 2:50:00 PM  ( From Author ) From Authorid: 5301

...another fun idea would be to stick the thing in a neighbor's mailbox or under the windshield wiper on their car.
You know that they would do that to you so what's holding you back?

Date: 12/4/2020 5:20:00 PM  From Authorid: 5940    Yeah, You’d think I’d have a roomful of roadkill where I live but nooooooooo! I have to compete with the cleanup crew, aka turkey vultures.
Date: 12/4/2020 5:53:00 PM  ( From Author ) From Authorid: 5301

...Hey Larry...maybe it's the fault of the recent election and the partial dismantling of the USPS.
Your packages are probably in a holding pattern somewhere but they will be delivered.
Nothing better than ripe roadkill jammed through your mail slot.

Date: 12/5/2020 3:57:00 AM  From Authorid: 5940    According to the USPS tracking number given me, due to COVID-19 it may take awhile to get to its destination. That’s code for don’t hold your breath.
Date: 12/5/2020 7:54:00 AM  ( From Author ) From Authorid: 5301

...I think that would be code for Definitely hold your breath once it arrives.

Date: 12/5/2020 1:03:00 PM  From Authorid: 5940    In other words.....dead on arrival?
Date: 12/7/2020 5:28:00 PM  ( From Author ) From Authorid: 5301

...could just be playing possum. Poke it with a stick.

Date: 12/7/2020 5:47:00 PM  From Authorid: 5940    All I gots is a divining stick...ya think we can commence to poking or should CSI be called in?
Date: 12/7/2020 7:42:00 PM  ( From Author ) From Authorid: 5301

...I personally can't see how you doing some dowsing will be much help in any way.
Not sure what the acronym CSI stands for but I'm guessing it means Cook Something Instantly.
If you know the people with a portable microwave oven, go ahead and call them but I thought
for sure that you would be more the type to use a crockpot.
