Louisiana Creole Recipe ~TGF

This is a recipe that I've watched my friend's mom make many times. I kept saying I'd try it and I never did...until just recently. To date I've made it 3 times, and each time it's come out great! Almost as good as what my friend's mom makes! :-D Those of you from Louisiana and that area will recognize this well. This is my friend's mom's take on it. She learnt it from her mom, I believe.

This is the amounts of ingredients that I use; you of course will have to add more depending on how many people you want to feed.

INGREDIENTS LIST:

2 yellow or white onions

1 package celery stalks

2 or 3 green bell peppers

1 package bacon

1 or 2 packages Hillshire Farms BEEF Smoked Sausage or Polska Kielbasa (has the best flavor)

2 14.5 oz cans of diced tomatoes

2 14.5 oz cans of tomato sauce

1 box of Zatarain's crab boil (or the Zatarain's crab boil liquid, STRONG stuff!)

3-4 bay leaves

Salt to taste (if needed)



Begin by chopping up the bacon with a very sharp knife (preferably a butcher knife or something similar; I generally start at one end, pull the knife towards me and cut through all the strips at once, and then pull the pieces apart to separate them, and do that for the whole package). Drop into large soup pot or stock pot on medium heat. Chop up other veggies and stir into the bacon. Cover and cook for about 10-15 minutes, stirring frequently, until onions are tender and bacon is starting to get crispy. Then slice up sausage and add, and then the diced tomatoes and bay leaves and stir together. For the crab boil, I like to cut the small porous bag open and pour out half the spices (saving for later) and that usually gives a strong enough flavor, but, you can use the whole bag for stronger flavor. If you cut the bag, remember to tie it closed before putting it in! If you are using the liquid you should only need one cap-full. Stir the crab boil in, cover, and simmer on low heat for 30-40 minutes, stirring occasionally. try to stir around the crab boil bag as bumping it too much can rip it. Take a taste halfway thru cooking to see if it needs salt, and add if desired.

Should make about 5-6 two-cup servings. :)

As for the crab boil, that probably is just a USA thing, so if you can get hold of bay leaves, just use a lot of them, like 6 or 7 and that should take the place of the crab boil, I would think.
