This is the best bbq sauce I've ever made. What makes it so good is how it sticks to the meat, I've never had that kind of success from any other bbq sauce, either homemade or bottled. It's probably the maple syrup that causes it to stick. This is very spicy, if you don't like spicy you probably won't like this. I got it out of the midwest living magazine.
1 small onion, finally chopped
3 cloves garlic, minced
1 tablespoon vegetable oil
1 cup ketchup
1/2 cup maple syrup or mild flavor molasses
1/3 cup cider vinegar or lime juice (I used apple cider vinegar)
2 chipotle peppers in adobo sauce finely chopped, plus 1 tablespoon adobo sauce (it's canned found in the mexican aisle)
1 tablespoon worcestershire sauce
1 tablespoon dijon style mustard
1/2 tsp salt
In a medium saucepan, cook onion and garlic in hot oil over medium heat about 5 minutes or until onion is tender. Stir in ketchup, maple syrup, vinegar, peppers and adobo sauce, Worcestershire, mustard and salt. Bring to boiling, reduce heat. Simmer uncovered for 25 to 35 minutes or until slightly thickened and syrupy, stirring occasionally. Can be used immediatly or cool to room temp and store in fridge for up to 2 weeks.
