Simple meal suggestion for a budding 'chef' :)

Hey guys. I enjoy cooking here and there, but since my mom started a new job, i made it my business to make a meal every Thursday night. It's one of my days off, and it beats her having to come home to cook when she's also got schoolwork to do.


I digress. I'm going to toot my own horn for a minute...i actually *can* cook, and pretty darn well! However, i want to expand from my safe zone of playing with chicken and fettucini alfredo.


My mom is taking an early flight to NY tomorrow morning, and tends to have a sensitive stomach. The last thing i need is for her to eat something, and end up with an upset stomach on a 4 hour plane ride.



Any suggestions for me? Something simple, but i want it to be a bit Southwestern (I like themes, we live in Arizona). Trouble is, most soutwestern food is zesty and a big no-no for some stomachs.

Date: 10/8/2009 4:40:00 PM  From Authorid: 12806    I can't think of anything with a "southwest" theme that I would recommend to someone with a senitive stomach who is about to get on a plane. I know all too well how uncomfortable that can be. I take 10 and 12 hour flights all the time.... Not fun.

Anywho, I would recommend some nice baked Rosemary Chicken (rosemary is very good for the stomach) with a side of steamed asparagus (cooked until they are nice and soft) with olive oil, or an herbed butter, or hollandaise sauce. And perhaps a simple salad with some shredded carrots on top (just to break up all that green) with a vinegarette dressing. And perhaps a nice glass of white wine to help her relax on the plane.
