Lamb is the preferred meats to eat over here Abszy...I cook a roast lamb leg every sunday...all I do is cut some slits in the leg, put in some garlic slivers into the slits, also some rosemary and then rub salt all over it...sit it on a rack, I put some water in the bottom of the roasting pan, and SLOWLY cook it...no need to add oils etc as lamb is a fatty meat and the fat and juices will run over the leg as it is slowly cooking... Sometimes the lamb sold is not so young and could be tougher...if in doubt, I prepare it the same way and then wrap it in alfoil and roast it without it being on a rack and don't add the water It's not hard to cook lamb and it really isn't necessary to go to a lot of trouble with it, the secret is to cook it slowly, don't have the power up high, keep it lower and give it plenty of time to cook right through...and when cooked, and you serve it up, try some mint sauce with it....ohhhhhh just delicious... We love our roast lamb dinners over here and its always been a custom of mine to have it on Sundays, my kids even as teenager would always head back home for my roast dinners LOL...with roasted potatoes, pumpkin,green beans, peas, broccoli and cauliflower au gratin, then gravy and finished off with home made apple pie and whipped cream...yummy!! |

Thanks guys I used EVOO too. Zema, yes Australian lamb is the best but it's not always available around here I tried again for lunch today using baby lamb and it turned out perfect! Thank you Matt! I love that website too! |
Date: 7/24/2009 11:42:00 AM From Authorid: 62579 I always bake with a lid on the pan with some water in the bottom. Also cook it slow that should keep it from getting done so quick and can cause it to be dry and hard. I never ate lamb or even made it but I am sure it is like most meats. |
