Chicken Qusadillas..............................Becky

I'd been meaning to share this for a while, and Angelbelle is looking for chicken recipies so here goes!

This makes ONE qusadilla just multiply the ingredients for however many you want.

1 Chicken breast

1 flour tortilla

2tbs freshly minced onion

shredded cheddar cheese (Whatever looks good...I probably use 1/4c)

Crushed red pepper (to taste, I probably use 1tsp)

Fajita seasoning (Again to taste) I use Bolner's fajita seasoning, I don't think it can be bought in stores but can be found at ***http://www.fiestaspices.com/?page=fajitaseasoning*** Though I'm sure other seasonings work fine.

Ok here goes.

Dethaw your chicken and thin slice it.

season with fajita seasoning and cook in a frying pan until the meat is completely cooked.

Remove the meat and place in the center of your tortilla. Place your minced onion on top of the meat, followed by your cheese. Then sprinkle your crushed red pepper on top.

Fold your tortilla in half and place in the frying pan.

Flip often as it can burn quickly. Once the tortilla has hardened and has 'golden' spots (Cheese should be melted by then). It's done.

YUM....

Now I want some and I'm out of fajita seasoning LOL

I was looking for something 'new' to do for dinner one night in one of my cookbooks....I didn't have everything for something they suggested so I modified their recipie into this. (If others have done it THIS way...well good for them. But I claim it! LOL) Anyway there in the begining I think I was making them twice a week LOL
