PINEAPPLE PUFFS

1 1/2 cups sugar

1/2 cup margarine or butter, softened

1/2 cup sour cream or plain yogurt

1 egg

1 can(8 1/4 ounces) crushed pineapple, undrained

3 1/2 cups all-purpose flour

1 teaspooon baking soda

1 teaspoon vanilla

1/2 teaspoon salt

1/2 cup chopped almonds

Vanilla Frosting (below)

Heat oven to 375 degrees. Mix sugar, margarine, sour cream, egg and pineapple in large bowl. Stir in remaining ingredients except Vanilla Frosting.

Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8 to 10 minutes or until almost no indentation remains when touched in center. Immediately remove from cookie sheet. Cool completely. Prepare Vanilla Frosting and spread on cookies.

About 6 1/2 dozen cookies.

VANILLA FROSTING:

2 cups powdered sugar

2 to 3 tablespoons milk

1 teaspoon vanilla

Mix ingredients until smooth and of spreading consistency.
