QUICK GRANOLA COOKIES

1 package (18.25 ounces) yellow cake mix with pudding

3/4 cup shortening

1/2 cup packed brown sugar

2 eggs

1 1/2 cups 100 percent natural cereal (any flavor)

1/2 cup chopped nuts, if desired

Heat oven to 375 degrees. Mix about half of the cake mix (dry), the shortening, brown sugar and eggs in large bowl until smooth. Stir in remaining cake mix, the cereal and nuts.

Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until light brown, 10 to 12 minutes. Cool 1 minute before removing from cookie sheet.

About 5 dozen cookies.
