Combine 1 peeled chopped mango with 3 cups cooked chopped chicken, 1/4 english cucumber, sliced, and 1 chopped roasted red pepper.
Stir in 1/4 cup bottle Italian or creamy cucumber dressing.
Wonderful over a bed of baby spinach.
