1/4 cup espresso-style ground coffee

2 cups water

1/3 cup cocoa

3 tablespoons sugar

3 cans (each 385 ml) carnation 2% evaporated milk

Cocoa (garnish, optional)

Place the espresso grounds in a drip-style cofee maker lined with a filter and pour in water. Brew according to manufacturer's instructions.

Combine the cocoa and sugar in a deep saucepan set over medium heat. Whisking, gradually stir in all but 1/2 cup of the evaporated milk. Heat, stirring often, until steaming. Stir in the brewed espresso. Keep warm.

Heat the reserved evaporated milk until steaming. Whip until foamy using electric beaters. Divide the hot coffee mixture between six mugs. Spoon the foam over top and sprinkle with additional cocoa powder.

Makes 6 servings.
