SALMON SHORTCAKES

1 recipe Herbed Mayonnaise (recipe follows)

1 egg, beaten

2 tablespoons mayonnaise or salad dressing

3/4 cup soft bread crumbs

1 green onion, chopped

1 (14 3/4 ounce) can salmon, drained, flaked, and skin and bones removed

1 tablespoon margarine or butter

4 purchased buttermilk biscuits, warmed, or one 10.8 ouce package refrigerated large flaky biscuits, baked



Prepare Herbed Mayonnaise; set aside

In a medium bowl combine egg and mayonnaise; stir in bread crumbs and green onion. Add salmon; toss to combine. Shape salmon mixtureinto eight 1/2 inch thick patties. In a large skillet melt margarine over medium heat. Cook patties in hot margarine about 9 minutes or just until browned, turning once.

Split biscuits. Place 2 salmon patties on the bottom of each biscuit. Spoon on Herbed Mayonnaise; replace biscuit tops.

Makes 4 servings.

HERBED MAYONNAISE: In a small bowl stir together 1/4 cup mayonnaise or salad dressing, 1 tablespoon snipped fresh dill, and 1 tablespoon milk. Stir in enough additonal milk to make the mixture of drizzling consistency.
