2 tsp. Lemon pepper seasoning 1/3 cup all-purpose flour 4 small skinless boneless chicken breasts 4 scallions, chopped 7 Jumbo pitted blacl olives, chopped Juice of 1 lemon Pinch of Curry powder 3 Tbsp. fat free Italian dressing 1 Avocado, peeled & diced 3 Plum tomatoes, diced. Step 1... Preheat the oven to 400* (200*C). Coat a baking dish with cooking spray. Step 2... Combine the seasoning & the flour. Lightly coat the Chicken with the cooking sprayand then coat each breast with the flour mixture. Place the chicken in the prepared dish & bake for 20 minutes or until cooked through. Step 3 ....In a bowl, combine the scallions, lemon juice, curry powder, dressing, avacado, tomatoes & olives. Step 4.. Divide the chicken breasts between fouf plates & top with avacado salsa. TIP!!!! Warmed chicken breasts topped with vegetable sa;sa will give a whole new meaning to grilled chicken salad..Try this concept with a piece of coooked Tuna and a fruit based salsa made with Mango, Papaya, Red Pepper, Red onion & Balsamic Vingar.....
