DATE-NUT PINWHEELS

12 ounces pitted dates, cut up

1/3 cup granulated sugar

1/3 cup water

1/2 cup chopped nuts

1 cup packed brown sugar

1/4 cup margarine or butter, softened

1/4 cup shortening

1 egg

1/2 teaspoon vanilla

1 3/4 cups all purpose flour

1/4 teaspoon salt

Cook dates, granulated sugar and water in saucepan, stirring constantly, until slightly thickened; remove from heat. STir in nuts; cool.

Mix brown sugar, margarine, shortening, egg and vanilla until smooth. Stir in flour and salt. Divide into halves. Roll each half into rectangle, about 11 inches by 7 inches, on waxed paper. Spread half of the date-nut filling over each rectangel. Roll up tightly, beginning at 11 inch side. Pinch edge of dough to seal well. Wrap and refrigerate at least 4 hours but no longer than 6 weeks.

Heat oven to 400 degrees. Cut rolls into 1/4 inch slices. Place about 1 inch apart on ungreased cookie sheet. Bake until light brown, about 10 minutes. Remove immediately from cookie sheet.

About 5 dozen cookies.
