LONDON BROIL BEEF BRISKET WITH LEMON MAYONNAISE

2 tablespoons olive or vegetable oil

5-pound fresh beef brisket (not corned beef) trimmed of fat

1/2 teaspoon lemon pepper seasoning salt

3 tblespoons grated lemon peel

1 1/2 teaspoons grated gingerroot

2 tablespoons soy sauce

1 cup mayonnaise or salad dressing

1 tablespoon grated lemon peel

1/2 teaspoon lemon pepper seasoning salt

Heat oil in 12 inch skillet over medium-high heat. Sprinkle beef with 1/2 teaspoon lemon pepper seasoning salt. Cook beef in oil until brown on both sides. Place beef in 5 to 6 quart slow cooker. Mix 3 tablespoons lemon peel, the gingerroot and soy sauce in small bowl; spoon over beef.

Cover and cook on LOW heat setting 8 to 10 hours.

Remove beef from cooker; cut across grain into thin slices. Mix mayonnaise, 1 tablespoon lemon peel and 1/2 teaspoon lemon pepper seasoning salt in small bowl. Serve beef with mayonnaise.

She says her email is slammed full of your recipes I read here, Lol.. you really should start a recipe book and sell some at like church sales, yard sales, and things like that. I bet you come up with a book about three inches thick!! I would DEFINITELY buy one if you ever put them all together.. that is one sale you can count one (-: And I know my daughter would want one, and then my son would want his own of course, Lol, so actually, there are three sales you can count on (-:

Date: 7/14/2004 11:03:00 AM  From Authorid: 59876    boy, i wish i would have had this last night! for the first time last night i was making brisket for the first time in some manner besides smoking it. i looked all over the net at different recipes. i ended up baking it for three hours as specified but it started to burn and there was no sauce lol. it was still good, but i was not happy. next time i'll try this one. thanks for sharing!
