Skillet Quesadillas

I promise these are GOOD!

1/2 cup cooked ckicken breast, skinless. (I use a little more) 1 teaspoon vegetable oil 2 medium size (my choice) tortillas 1/2 cup shredded mexicam blend or your choice of shredded cheese, Condiments of your choice, salsa, sour cream, lettuce and tomato, use your own ideas, guacomole, whatever, this is good and easy. I just boil some chicken breast, use what you have, baked or leftover chicken, chop it, set aside. Heat oil in non stick skillet and scatter chicken (fully cooked) over the tortilla Sprinkle cheese, as much as you like, place another tortilla on top, brown and flip, do the same on the other side until cheese melts. 2 to 3 minutes maybe. press down with a spatula. These are QUICK, EASY, and AWESOME! make one at a time using a smaller skillet, and cut into 4 pieces. My family loves them. This is the easiest thing I've ever made that tastes SO good!

I make my own salsa and as long as we have sour cream we eat pretty much anything that we can wrap a tortilla around. This was such a simple and easy recipe and the kids love them.
