*~* Chile Relleno Casserole *~* Hey,Hey,Paula

3- 7 oz. cans whole green chiles

1 lb jack cheese, grated

1 lb sharp cheddar cheese, grated

3 eggs, beaten

3 tbs flour

1 small can evaporated milk

1 15 oz can tomato sauce, I use salsa, preferably chunky

Preheat oven to 350. Wash chiles, remove seeds and pat dry with paper towel (i spread them out on paper towels after rinse to start process). In 9" x 13" baking pan (really i use 9x9 for that amount--yours was double batch, as i remember). Layer 1/2 the chiles then 1/2 the cheeses. Repeat the layers, saving 1/2 cup cheese for topping. Beat eggs, add flour and milk and beat 'til blended. Pour egg mixture over the chiles and cheese.

Bake in 350 oven for 1/2 hour. Remove and spread sauce or salsa over top and sprinkle saved cheese over that. Bake another 15 minutes. or hold at that stage to take to someone and let them cook 15-20 min. at 350 in their oven. Cut into squares. Serves 8-10.
