Tater Cakes ~!*Crooked Halo~!*

These are good with Soup beans (pinto beans) and greens and fried chicken :~P.We always fry everything in olive oil so this is not as bad for you as it may seem lol.

You Need Leftover mashed potatoes,a half or so of onion,1 cup of flour,about 1/2 cup water.

Mix mashed potatoes,onions,flour,water in a bowl form into patties and fry till a golden brown.

I also add plenty of salt and pepper and I dust the outsides of them with flour in order to help them get really crispy. I'm sure that olive oil would work fine but I prefer vegetable oil, corn oil or Crisco. I agree with you that these would be great with fried chicken, greens and pinto beans. Some cornbread to go with the beans would hurt anything, either. This post is making me hungry.

I always make my mom cook me fried bread patties though..Im not sure how she makes em but they sure are good! My mom usually uses those hungry jack instant mashed potatoes though..so this probably wouldnt turn out so good for me LOL!
