I made this the other night and its really good.

What you need

1 bunch Broccoli, 1 cup or so Caulaflower(depends on how much you want to make) ,10 or so baby Carrots, Half block Tofu, A half bell pepper, half onion ,any other veggies you wanna use. a large bowl, a knife, Olive Oil, Lite Soy Sauce,Ginger

pull the stems and green part off the broccoli wash and peel the stalk cut it up to take the place of water chestnuts, cut up the rest of the veggies in the large bowl. Pour a few teaspoons of olive oil in the pan let it warm dump in the veggies let them cook for a few minutes and if you feel the need you can add some more oil, add the soy sauce & ginger cook a little while longer(about 3 mins). While your veggies are cooking after you add the soy sauce cut up the tofu into small pieces. Add tofu to the mixture and let it cook around 5 mins Put a lid on and let it cook till all the vegtables are soft and the tofu is a browned color.

Sorry if this is confusing I just made it up as I went a long and didnt measure.
