Tomato Pie-this sounds YUMMY!>FisherQueen<

ok I saw this recipe on the Food Network, I hate tomatoes but this recipe and looks and sounds SO good.

1 pie crust (homemade or store bought) 4-6 large tomatoes, any kind 1c Mozarella cheese 1c Chedder Cheese 1c Mayonaise 2 leaves of fresh Basil OR a few pinches of crushed Basil

Start by cutting an X in the bottom of each tomato, then boil the tomatoes for a mintue until the skin looks like it can be peeled off, then peel the skins off the tomatoes. Slice the tomatoes in thin slices and put in a colander for a few mintues to let as much juices as possible drain from the tomatoes, so it won't make the crust soggy. Once the tomatoes are drained set them in the pie crust until the pie crust is filled almost to the top. Then add the basil. Set aside.

Then you make the dressing. In a bowl you mix the mayonaise and the 2 cheeses until they are well mixed. Then you pour the dressing on top of the tomatoes, and put in the oven at 375 for about 10-20 mins, you will know it is done when the dressing is melted on the top, also you can stick a butter knife in the center and feel the knife, if it is hot then it is done, if not then give it a few more minutes. This dish goes well with anything. You can have it with your eggs in the morning or as a side dish for dinner...
