The answer is simple: It's because they're brave.
It seems that the patch is symbolic of the flags courageous fighting men used to carry onto the battlefield.

Since the American flag attaches to the flagpole with the stars nearest the pole, the flag would be seen stars-first as soldiers ran toward the action.
