Shortbread Cookies.......Metal princess

Ingredients:

110g butter or margarine (room temperature)

50g caster sugar

175g plain flour (sifted)

Extra caster sugar for dusting

Method:

Pre-heat the oven to gas mark 2,300F or 150C. Lightly grease a baking sheet. Beat the butter with a wooden spoon until it is soft, then beat in the sugar, followed by the sifted flour. Still using the wooden spoon, start to bring the mixture together, then finish off with your hands to form a paste.

Dust your surface with caster sugar, then roll the paste out to about 3mm thick. Cut the biscuits out with a shaped cutter, then arrange them on the tray and bake in the oven for about 25 minutes.

Cool the biscuits on a wire tray and (you can, if you want) dust with caster sugar.

**Shortbread Cookies**

2 cups flour**
1 teaspoon baking soda**
1 teaspoon vanilla**
1/2 cup brown sugar**
1 cup margarine**
1 egg yolk**

Cream butter & sugar. ** Blend well. ** Add egg yolk and vanilla. ** Add flour
and soda. ** Blend well.

**Bake @ 350F ** 10 minutes until brown.
