haha some of you might not like this, but its pretty good to me:

Rose Petal Jam:

2 lbs. of rose petals

8 cups of sugar

1 teaspoon of lemon salt

1 cup of water

1. wash the rose petals very slowly and drain

2. put into a large bowl, sprinkle with 1 cup of the sugar, and lemon salt. rub with you fingers and squeeze well to get the juices out of thepetals. reserve the juice.

3. put the remaining sugar into a pan. add water and on a low flame, dissolve the sugar and bring to a boil and cook for 3 minutes to make a thick syrup.

4. add the rose petals into the syrup and cook for 10 minutes. stirring constantly.

5. add the reserved rose petal juice into the pan, stir, and cook fora few minutes. remove from heat.

6. put plenty of ice vubes into the sink or into a large bowl. put the pan of rose petal jam over the ice cubes to cool quickly, keep stirring until cool.

7. put into sterilized jars and preserve.

there it is, i took this from my moms cookbook

Date: 10/11/2001 4:18:00 PM  From Authorid: 33088    Now, see? This proves my point about the sharing of cultures! MY PEOPLE, (Algonquin Cnadian Natives) when the English sailors landed on Canada's shores, couldn't believe how sick and frail they were with scurvy! How was it (we asked ourselves)that the English had forgotten to pack rose petals and rosehips on their big ships? Because EVERYONE KNOWS (except apparently English sailors) that rose petals and rose hips have SIXTY times MORE Vitamin C content than oranges! Apparently this is a fact your people know also! Thank you for sharing this. To me, it sounds YUMMY!!! Love,
