Date: 4/4/2001 1:55:00 PM From Authorid: 24963 Well here is something I imagine must be low fat that I like to make for my family Take 4 skinless, boneless chicken breasts(frozen or fresh, defrost before hand if frozen). Put them in a baking dish. then take 2 cans of (I beleive it is Del Monte brand)diced tomatoes, the ones that are flavored with basil, oregano, or garlic(they are low in fat I beleive). Which ever flavor you prefer. Pour one can tomatoes, juice and all, over the chicken. Bake at 375 untill chicken is done. Cook up some angel hair pasta (about 12 oz is how much I make). Once that is done and drained, pour the other can of tomatoes over the pasta. Heat it up a little more to get the tomatoes hot. Add any other seasonings to your liking and serve! Goes great with some garlic bread. Its very light, and delicious. I love this dish and I am not too fond of tomatoes or chicken! the juices in the tomatoes keep the chicken nice and juicy. I hope this is something that you are looking for! I have other meal ideas and such just message me for more ~Ferret |
