**Lemon Cheese Squares**

~Crust~

1/4 cup brown sugar

1/3 cup butter, softened

1/2 tsp. ground nutmeg

1/4 tsp. ground cinnamon

8-oz. cream cheese, softened

2/3 cup sugar

1/4 cup fresh lemon juice

1 Tbsp. lemon zest

1/2 tsp. vanilla

1/2 tsp. baking powder

1 egg

Combine crust ingredients and mix until crumb mixture forms. Spray an 8-inch baking pan with cooking spray and press crust evenly into bottom of the pan. Bake for 15 minutes at 350 degrees. Meanwhile, combine filling ingredients and mix with a hand mixer or food processor until smooth. Pour over crust and spread out evenly. Bake at 350 for 20 - 25 minutes. Allow to cool and chill before cutting into squares and serving.

The Skinny: Use light cream cheese and your favorite sugar and egg substitutes.

Date: 2/9/2001 10:52:00 PM  From Authorid: 277    Does this recipe attract ghosts or keep them away? Maybe it gets rid of poltergeists too? Is there a new recipe category now? Am I still at unsolved mysteries? Maybe paranormal mysteries will be the answer once it's up and running???????

Date: 2/10/2001 6:59:00 PM  From Authorid: 3835    remember the email system? I think reciepes really dont fit the unsolvedmysteries theme, and altho these are good recipes, I think email would be the way to share if wanted. Guess I am just looking for the mysteries on this site, not anything about food...LOL, please forgive.
Date: 2/11/2001 5:01:00 AM  From Authorid: 160    Sur5R, there are a lot of catagories that do not fit the theme of unsolved mysteries but they are listed none the less, so why not a new catagory for this type of thing. I personally think it would be a hit as there are a lot of us that are at-home Moms and housewives.
