These are so versatile! I'm sure they can be made with other meats and fish as well but I haven't tried. You can basically customize these according to your tastes. The only recommendation I would make would be to include a good amount of seasoning. My recipe serves three and I'm really bad with measurements and directions so bare with me! I can answer any questions you may have!
Ingredients:
- 3 boneless and skinless chicken breasts - Broccoli florets - Mushrooms (your choice -- I usually add shiitake and enoki) - dried seaweed sheets - light mayo - miso soup powdered mix - sesame oil - ginger (I usually buy the ginger in a squeeze bottle)
Directions:
- Place one thawed chicken breast on a large piece of foil. The foil has to be big enough for the chicken and veggies to fit, and also big enough for you to be able to close it into a packet. - In a separate bowl, mix the light mayo, half a teaspoon of sesame oil, a packet of miso soup powder, and ginger (to taste). Make sure you make enough to brush on all three breasts. - Brush the mixture onto all three breasts. I like to make a nice coating on top of the chicken as it helps keep it moist and flavorful. - Sprinkle sesame seeds onto the chicken, take your sheet of seaweed, and wrap it around the chicken breast. - Add the veggies. I usually arrange the broccoli around the breast and place the mushrooms on top. Sometimes I will also add spinach. - Close the foil into a packet (no gaps) around the chicken and veggies. - Preheat the oven to 450 - Once preheated, place the three chicken packets on a baking sheet and cook for 20 - 25 minutes.
When you open the packets the chicken and veggies will be steamed and seasoned to perfection. Sometimes the packet contains a bit of "broth" from the chicken, veggies, and sauce. I usually make some jasmine rice as a side and add this "broth" to the rice on my plate for extra flavor. Enjoy!
