Mexican Chicken Soup

Mexican Chicken Soup

This traditional soup is simple to prepare and makes for a hearty meal. The Rotel adds some zest and really brings the flavors together.

Ingredients6-8 chicken thighs
1/2 head cabbage
1/2 small bag baby carrots
3-4 medium potatoes
1 cup rice
1 can Rotel
1 cup cilantro
1 small onion
2 tbsp garlic powder
Salt and pepper to taste

Method
In a large soup pot, add chicken, salt, pepper and garlic powder. Boil about 30 minutes. Add remaining ingredients and boil until rice is cooked and vegetables are tender.

Number of Servings: 6-8

Date: 7/18/2010 12:22:00 PM  ( From Author ) From Authorid: 64413    Rotel is chopped tomatoes and chopped green chili peppers, you can buy in a can all ready for you too use..there are many off brands..just has to be the chopped tomato and green chili mixture..
