Mexican Chicken Soup

This traditional soup is simple to prepare and makes for a hearty meal. The Rotel adds some zest and really brings the flavors together. Ingredients6-8 chicken thighs 1/2 head cabbage 1/2 small bag baby carrots 3-4 medium potatoes 1 cup rice 1 can Rotel 1 cup cilantro 1 small onion 2 tbsp garlic powder Salt and pepper to taste Method In a large soup pot, add chicken, salt, pepper and garlic powder. Boil about 30 minutes. Add remaining ingredients and boil until rice is cooked and vegetables are tender.
