Low-carb recipes, Stir-fry chicken (got anymore?)

I recently starting sticking to my Atkin's Low Carb diet very strictly. I love protien foods like meat, cheese eggs and veggies, the only problem is I don't know a whole lot of recipes that don't have carbs (potatoes, rice, and pasta) in them. Someone gave me an idea for a recipe and I tried it last night and I have to say it's better than the original. I wanted to share it here so that others would have a better chance of seeing it.

Chicken Stir-Fry (no rice)

1 boneless chicken breast, diced 1/2 large vidalia onion chopped (they are sweeter) 1 green pepper chopped 1/2 cup carrots julliene (slice about the size of matchsticks) 1/2 bean sprouts (I love them but you don't have to add them.) 1 cup brocolli spears (or more if you like) 2 chicken boullion cubes 1/2 cup water soy sauce 2-3 tbspns butter or margarine 1/2 head of califlower

Boil broccoli until tender. Set aside. In a large frying pan,
I was sceptical when I heard about this but it's awesome. In fact I like it better without rice because it's filling but doesn't weigh you down from carbs. And it didn't really taste any different. When I was done with my dinner last night I made up a whole new batch and refrigerated it so I can have it when ever I'm hungry.

I told my husband I could eat it everyday of the week. But if I do that I will probably get sick of it so if anyone has any great recipes they'd like to share with me please do. I'm sticking with this diet and I feel so great, full of energy without the carbs weighing me down and making me tired. I don't even crave them anymore. I even gave up my 5 cans of pepsi a day. Biggest milestone ever. I'm now drinking ice tea with no sugar and loving it, the thought of sugar no makes me sick. I tried diet pepsi but couldn't handle it.

Anyway please, please share your low carb recipes with me, I've been trying all kinds of ideas. If anyone has a recipe for eggplant that would be great, my husband came home with one last night but I've never made anything with them. lol

They have absolutly everything you could imagine in low carb recipes. Well have to get in touch... i too am doing a high prtien/ low carb diet and i had alot of success, i lost 15 pounds in two weeks.... well, hope you like the site *hugs*
